Garlicky Rose Pasta

Ingredients

  • 2
    servings Pasta
  • 2
    tbsp Olive Oil
  • 1
    head Garlic
  • 1/2
    Large Onion
    Chopped
  • 1
    Medium Tomato
    diced
  • 1/2
    tsp Red Pepper Flakes
  • 1/2
    tsp Dried Thyme
  • 1/2
    tsp Dried Oregano
  • 1/4
    Cup Rose Wine
    Optional
  • 1/2
    Cup Marinara Sauce
  • 1
    Cup Heavy Cream
  • 1/4
    Cup Parmesan Cheese
    Grated
  • Salt
    to taste
  • Pepper
    to taste
  • Parsley
    chopped

Instructions

Chop off the top of the garlic head and drizzle 1 tbsp olive oil top. Wrap in foil and bake in the oven at 400°F for 35 mins. Squeeze out garlic cloves

Heat up the remaining 1 tbsp of olive oil. Add the onion & cook until translucent. Add in the tomato, red pepper flakes, herbs, and cook for about a minute.

Add in the wine (optional) and cook for another 1-2 mins, until most of the liquid has evaporated.

Add in marinara sauce, heavy cream & the baked garlic mash. Bring to a boil. Season with salt & pepper. Turn off heat and add in the cooked pasta and parmesan.

Garnish with parsley and more parmesan and serve!
