Chili oil - mild (Bamboooyah)

Ingredients

  • 10
    Cloves Garlic
    Minced
  • 1
    tsp Salt
  • 1/4
    tsp MSG
  • 1/2
    tsp Sugar
  • 1
    tsp Coriander
  • 1
    tsp Chicken Bouillon
  • 1
    tbsp Sesame seeds
  • 1
    cup Oil (neutral)
  • 1
    Cinnamon stick
  • 3
    Star anise
  • 2
    tbsp Sichuan peppercorns
  • 3
    Bay leaves
  • 5
    Dried chilis
    broken

Instructions

In a heat proof bowl, combine 10 Cloves Garlic (Minced), 1 tsp Coriander, 1 tsp Chicken Bouillon, 1 tsp Salt, 1/2 tsp Sugar, 1/4 tsp MSG, 1 tbsp Sesame seeds

Add 1 cup Oil (neutral) to a small pot over medium low heat. Get oil hot.

Add 2 tbsp Sichuan peppercorns, 5 Dried chilis (broken), 3 Bay leaves, 3 Star anise, and 1 Cinnamon stick. Let the spices toast for 2-3 minutes.

Place a fine mesh strainer over the heat proof bowl, and carefully pour the oil through the strainer onto the garlic and seasonings.

Stir the chili oil while it’s sizzling, then let it cook completely before transferring it to a glass jar with a lid. Store in the fridge!
