Ingredients

    onion
    diced
  • 1
    tsp oil
  • 2
    potatoes
    peeled and diced
  • 4
    cups bone broth
  • 2
    carrots
    peeled and diced
  • 2
    cubes curry roux
  • 1
    tbsp okonomiyaki, sriracha
  • 1
    tsp fish sauce
  • 1
    cup oil
  • 1
    lb boneless pork chops
  • 2
    eggs
    beaten
  • 1
    cup panko breadcrumbs
  • 1
    cup flour

Instructions

add 1 tsp oil to a large pot over medium heat. add 1 onion (diced) and cook for about 8 minutes until the onions are slightly browned.

add 2 potatoes (peeled and diced), 2 carrots (peeled and diced), and 4 cups bone broth.

let this cook for 20 minutes, then add 2 cubes curry roux. stir until it’s combined. Optional: 1 tbsp okonomiyaki, sriracha, 1 tsp fish sauce.

pour 1 cup oil into a shallow frying pan over medium low heat. pound 1 lb boneless pork chops until thin, season with salt and pepper.

dredge the pork into 1 cup flour, dip it into 2 eggs (beaten), then coat in1 cup panko breadcrumbs.

place the breaded pork into the pan and fry for about 3 minutes on each side.

serve with piping hot rice and enjoy🙂
