Yeon Geun Jorim (Braised Lotus Root)

Ingredients

  • 1 lb
    lotus root
    peel and cut
  • 1 tbsp
    apple vinegar
  • 2 tbsp
    vegetable oil
  • 1/2 cup
    soy sauce
  • 3
    cloves garlic
    minced
  • 1 cup
    korean rice syrup
  • 1 tbsp
    sesame oil
  • 1 tbsp
    sesame seeds

Instructions

Peel, cut, and rinse lotus root 1 lb lotus root (peel and cut)

blanch lotus root disks for about 5 minutes and add 1 tbsp of apple vinegar 1 tbsp apple vinegar. rinse under cold water

add two tbsp vegetable oil to your pan and cook your lotus disk for about 5 minutes until slightly translucent 2 tbsp vegetable oil

add 2(1/2) cup water, 1/2 cup soy sauce, and minced garlic to the pot 1/2 cup soy sauce 3 cloves garlic (minced). simmer on low-medium heat for about 40 minutes

add 1 cup of korean rice syrup and stir for about 3 minutes. let this simmer for another 20 minutes (lid on) 1 cup korean rice syrup

turn the heat on high and braise for an additional 10-12 minutes. turn off heat and stir in about 1 tbsp sesame oil. plate and top with sesame seeds + serve! 1 tbsp sesame oil 1 tbsp sesame seeds
