Instant Pot Cauliflower Curry

Ingredients

  • 1/2
    Onion
    Chopped
  • 4
    Cloves Garlic
    minced
  • 4
    Cups Cauliflower
    florets
  • 2
    Cups Butternut Squash
    cubed
  • 1/2
    Cup Red Lentils
  • 1
    Can Fire-Roasted Tomatoes
  • 1
    tsp Red Curry Paste
  • 1
    tsp Curry Powder
  • 1
    tsp Pink Salt
  • 1
    tsp Turmeric
  • 1
    can Coconut Milk
    unsweetened
  • 1/4
    Cup Water
  • Rice
    for serving

Instructions

1. Put everything in Instant Pot and set to High pressure for 5 minutes. Release pressure right away.

2. Serve with rice!

3. To make stovetop, saute onion and garlic for 5 minutes. Add everything else and simmer 10 minutes.
