East Three Cup Mushroom Recipe

Ingredients

The Sauce

  • 2
    tsp Sugar
  • 3
    tbsp Rice wine
  • 1.5
    tbsp Sesame oil
  • 3
    tbsp Soy sauce

Aromatics

  • 3-5
    pieces Ginger
    sliced
  • 2
    cloves Garlic
    sliced
  • 2
    Red chilis
    sliced
  • 8
    oz Mushrooms
  • 1
    tbs Olive oil
  • 1
    handful Fresh basil

Instructions

Prep 8 oz Mushrooms by chopping / trimming ends of mushroom. Prep garlic, ginger, and peppers by slicing.

Prep sauce: combine 3 tbsp Soy sauce, 3 tbsp Rice wine, 1.5 tbsp Sesame oil, and 2 tsp Sugar.

Heat a pan with 1 tbs Olive oil and add in 2 cloves Garlic (sliced), 3-5 pieces Ginger (sliced), and 2 Red chilis (sliced). Stir fry 1-2m until fragrant.

Add in mushrooms, and stir fry for 1-2m.

Add in sauce mixture and stir fry for 1-2m. Add in 1 handful Fresh basil and stir fry until mushrooms are cooked through.

Serve with rice and enjoy!

Kimchi Guk (kimchi soup)

    cups Kimchi
    chopped
  • 1/2
    pound Pork belly
    cut
  • 2
    tablespoons Hot pepper paste
  • 1/2
    tablespoon Sugar
  • 5
    cups Water
  • 1
    pack Soft Tofu
    cut into bite sized pieces
  • 2
    stalks Green onion
    chopped

Instructions

Let’s make Kimchi Guk

Add 2 cups Kimchi (chopped) in a large soup pot

Add 1/2 pound Pork belly (cut) (option to buy already cut or cut into bite size pieces)

Add 2 tablespoons Hot pepper paste

Add 1/2 tablespoon Sugar

Add 5 cups Water and mix everything together

Add 1 pack Soft Tofu (cut into bite sized pieces )

Add tofu into pot and cook on medium heat for 10 minutes with lid on

Remove lid and add 2 stalks Green onion (chopped)

Turn off heat and remove pan from stove. Scoop a bowl for soup and include rice and side dishes for a complete meal

    pieces Seaweed sheets (unseasoned)
  • 1
    tablespoon Soy sauce
  • 2
    cloves Smashed garlic
    use back of the knife handle to smash the garlic
  • 2
    stalks Green onion
    chopped
  • 1
    teaspoon Red Pepper Flakes
    optional
  • 1
    teaspoon Sugar
    optional
  • 1
    tablespoon Sesame oil
  • 1
    tablespoon Sesame seeds

Instructions

Let’s make Gim Muchim (seaweed salad)

Use a grill or regular pan and turn to medium heat

Use 10 pieces Seaweed sheets (unseasoned)and begin lightly grilling the seaweed on both sides until slightly crispy. Other option to grill seaweed sheets on a heated skillet.

In a mixing bowl, add 2 stalks Green onion (chopped ), 2 cloves Smashed garlic (use back of the knife handle to smash the garlic ), 1 tablespoon Soy sauce, 1 tablespoon Sesame oil, 1 teaspoon Red Pepper Flakes (optional),1 teaspoon Sugar (optional), 1

Take the grilled seaweed sheets and begin to rip it into bite size pieces into the seasoning bowl. Mix it in until the seaweed pieces are evenly coated.Taste test and adjust or add additional seasoning to your liking.

Saesongi Beoseot Jeon (King Oyster Mushroom Fritters)

Ingredients

  • 1
    King Oyster Mushroom
    wash and rinse clean
  • 1
    pinch salt
  • 2
    eggs
    whisk together
  • 1.5
    cups all purpose flour
    1.5-2 cups of flour and place it on a flat plate
  • 1/2
    tablespoon rice vinegar
  • 1/4
    tablespoon red pepper flakes
  • 1/2
    tablespoon soy sauce
  • 1/2
    teaspoon sesame seed

Let’s make Saesongi Beoseot Jeon (King Oyster Mushroom Fritters)

1 King Oyster Mushroom (wash and rinse clean) Slice into 4-5 pieces (serving size per mushroom). Slice mushroom 1/4 of an inch in thickness.

Sprinkle 1 pinch salt

Whisk together 2 eggs (whisk together) in a bowl.(Bowl should be big enough to fit your mushrooms)

Preheat pan with cooking oil and turn on to medium heat

Take a king oyster mushroom and coat the mushroom with flour. Use 1.5 cups all purpose flour (1.5-2 cups of flour and place it on a flat plate ) repeat this step for all four mushrooms

Dip it in the egg mixture and make sure the mushroom slice is coated evenly with egg.

Place on heated pan. Approximately 2 minutes on both sides or until golden brown.

Remove mushroom from pan and place on a plate with a paper towel to help absorb excess oil

Let’s make the dipping sauce! 1/2 tablespoon soy sauce, 1/2 tablespoon rice vinegar, 1/4 tablespoon red pepper flakes, 1/2 teaspoon sesame seed

    pinch baking soda
    have it ready in a bowl
  • 2
    tablespoons sugar
    Have sugar ready in a bowl

Instructions

To start, gather the tools you will need to make the Ppop Gi- Dalgona Sugar Candy. Items needed: Cookie cutter, non-stick baking sheet or parchment paper, stainless steel ladle or pan, wooden chopsticks, metal press or another pan, and needle and tin can

Ingredients needed: 2 tablespoons sugar (Have sugar ready in a bowl)1 pinch baking soda (have it ready in a bowl )

Add in the sugar into the metal ladle. Turn the stove on to low heat. Place the ladle on top of the heat.

Begin to stir constantly with a wooden chopstick over low heat until the sugar is completly melted and turns into a golden color.

Add a pinch of baking soda and stir vigorously until it is completely mixed in and the color turns golden. The baking soda will make the sugar puff up a bit so make sure to stir completely.

Pour mixture out onto a non-stick silcone mat or parchment paper. Try to pour it out in a shape of a circle.

Let the mixture cool down for 15-20 seconds. (In the meantime quickly submerge your ladle into hot water for easy clean up.) Use a metal press or pan to press the candy into a thin circle. Try to press down evenly to get the most even shape. Remove the
