Musubi & Tuna Mayo Burrito

Ingredients

  • 1
    cup Sushi rice
    uncooked
  • 1
    cup Water
  • 1/2
    tbsp Sugar
  • 2
    tbsp Rice wine vinegar
  • 1
    tsp Kosher salt
  • 3
    long slices Spam
  • 1/4
    cup Panko breadcrumbs
  • 1
    tbsp Neutral oil
  • 1/4
    cup Cornstarch
  • 1
    Egg
  • 2-3
    tbsp Kewpie mayo
  • 1/2
    cup Cooked tuna
  • 1.5
    sheet Nori
  • 1
    tbsp Salmon furikake
  • 1
    handful Cucumber
    julienned
  • 1
    handful Imitation crab meat
    julienned
  • 1
    handful Salad greens
  • Unagi sauce

Instructions

Sushi rice - wash the 1 cup Sushi rice (uncooked) rice until the water is almost clear. Drain and add 1 cup Water. Put the rice in the rice cooker to cook.

Mix 2 tbsp Rice wine vinegar, 1/2 tbsp Sugar, and 1 tsp Kosher salt. Add to cooked rice, and mix lightly with a wet paddle. Let cool go room temperature.

Cut 3 long slices Spam. Coat with 1/4 cup Cornstarch, 1 Egg, 1/4 cup Panko breadcrumbs. Fry in a 1 tbsp Neutral oil for a few minutes until golden and crispy.

Prep tuna mayo. Mix 1/2 cup Cooked tuna and 2-3 tbsp Kewpie mayo in a bowl and set aside.

Fold 1.5 sheet Nori and cut in half. Set aside half for now. Using full sheet, place rice and spread, covering 2/3 of nori. Sprinkle on 1 tbsp Salmon furikake.

Place 1 handful Salad greens on rice, followed by 1 handful Cucumber (julienned). Then, place 1 handful Imitation crab meat (julienned) in front of cucumber.

Wet end of nori sheet with water and attach that 1/2 you cut earlier onto it by pressing the seams together. Then add a little rice on ends of nori sheet.

Roll nori using a bamboo mat, like a burrito. Wrap the burrito with parchment paper tightly, using burrito wrap method. Slice in half, and enjoy!
