Fully Packed Vegan Green Burrito

Ingredients

Sauce

  • 1
    tbsp Greek Yogurt
  • 1
    tsp Dijon Mustard
  • 1
    tsp Apple Cider Vinegar
  • 1
    tbsp Honey
  • 1
    tsp Lemon Juice
  • 1/2
    tsp Garlic Powder

Ingredients

  • Edamame
    unshelled
  • Purple Cabbage
  • Baby Spinach
  • 1
    Spinach Tortilla
  • Chickpeas
    seasoned
  • Hemp Seeds
  • Carrot
    sliced
  • Red Bell Pepper
    sliced

Instructions

Cook chickpeas in a frying pan with olive oil. season with salt & pepper, garlic powder, chili powder, and dried oregano.

Mix all the sauce ingredients in a bowl and set aside. Boil edamame in a saucepan with water and add a generous amount of salt. cook for 3-5 mins and drain.

Assemble the burrito in this order — spinach tortilla, baby spinach, purple cabbage, carrot, chickpeas, edamame, red bell pepper, drizzle the sauce, hemp seeds

Warp it into a burrito and then wrap in parchment paper tightly. toast in the oven for about 1-2 minutes, and cut in half. enjoy!
