    cups cooked lentils

    g cooked pasta
  • 2
    med bell peppers

    tbsp neutral oil

Sauté 2 med onions 2 med bell peppers with 2 tbsp neutral oil over med-high heat. Add 2 tsp seven spice 2 tsp sumac 1/2 tsp garlic 1/2 tsp salt & pepper (each)

Add 1/4 cup mylk. Bring to boil. Add 1 1/2 cups cooked lentils, tahini sauce 1/4 cup tahini 2 tbsp pom. molasses 6 cloves garlic 1/8 cup mylk 1/4 tsp s&p (each)

Stir in 500 g cooked pasta to coat in sauce.

Ingredients

For The Filling

    cup TVP
  • 1
    tsp Onion
  • 1
    tsp Garlic
  • 1
    tsp Salt & Pepper

    tbsp Veg Oil & Pom. Molasses
  • 1 1/2
    cups S/G Rice
  • 1
    tbsp Seven spice

For The Pot

  • 3
    Tomatoes
  • 80
    Grape Leaves
  • 8
    Grey Zucchinis
  • 3
    tbsp Lemon juice
  • 10
    cloves Garlic
  • 2
    tsp Pom. Molas.

Here’s how I make my Kousa w Waraa, with a plant-based twist! 
They’re a vegan meaty version of the Arabic stuffed zucchini and grape leaves.

Snip off tops & core out insides of 8 Grey Zucchinis. Rinse & soak in a bowl of water for a few minutes. Prepare 80 Grape Leaves (rinsed in cold water/snipped).

Rehydrate 3/4 cup TVP. Add: 1 tbsp Seven spice, 1 tsp Salt & Pepper (each), 1 tsp Garlic, 1 tsp Onion. Add: 1 1/2 cups S/G Rice, 2 tbsp Veg Oil & Pom. Molasses.

Use teaspoon for filling. Stuff zucchinis. Tap & push down, leaving space. Lay leaves flat, soft side down. Add filling. Fold bottom. Tuck in sides. Roll up.

Place 3 Tomatoes in pot. Layer Waraa & Kousa. Stuff 10 cloves Garlic. Add veg broth & 2 tsp Pom. Molas. Boil med-high heat. Turn med-low. Cover lid. Cook 2 hrs.

Place flat plate upside down on top of pot. Hold handles & lift up. Flip & drop into serving plate. Drizzle 3 tbsp Lemon juice, adjust salt & pepper. Serve hot.

Store leftovers in fridge for 5 days. Reheat in microwave for 1-2 minutes.

    phyllo sheets
    thawed overnight first
  • 1
    cup pistachios
    crushed
  • 70
    g fig date paste
  • 2
    tbsp simple syrup
  • oil spray

Agrabah Baklava - Inspired by the Disney movie: Aladdin. Recipe adapted from: GeeksWhoEat

Prepare ingredients: 8 phyllo sheets (thawed overnight first), 1 cup pistachios (crushed), 2 tbsp simple syrup, 70 g fig date paste, oil spray.

Blend pistachios in food processor/blender. Set aside in a bowl.

Lay damp clean towel on flat surface. Gently roll out phyllo sheets. Cut in half (horizontally). Place 1 on top of other. Remove 2 sheets. Cover rest in towel.

Place one sheet on clean flat surface. Cover in oil spray. Place second sheet on top. Repeat oil spray. Cut in half (vertically).

Fold bottom of each strip into a triangle. Spread 1 tsp of fig paste into triangle shape. Sprinkle pistachios into even layer. Roll and seal the end with spray.

Place in an air-fryer basket with oil spray. Bake at 400F for 8 minutes, flipping halfway, until golden.

Remove from basket. Place on serving dish. Drizzle hot Baklava in cold simple syrup immediately. Let it soak. Serve at room temperature/cold. LIKE 💙 for more!
