Rice Cakes w Bacon (@eunaeemily)

Ingredients

  • 1
    lb Dry rub bacon
  • Bacon grease
  • 2
    tbsp Gochujang
  • 2
    tsp Fermented black bean paste
  • Rice cakes
    (flat)
  • 3/4
    cups Water
  • Soy sauce
  • Green onions
  • Cilantro
  • Sichuan peppercorns

Instructions

Cook 1lb bacon until it's crisp. Save the extra bacon grease.

Add bacon grease to wok and heat for a minute. Add 2 tbsp of gochujang and 2 tsp of fermented black bean paste. Stir well for 2 minutes, so thoroughly mixed.

Add the entire bag of rice cakes to the wok, using hands to separate any that are stuck. Mix so each piece is covered.

Add 3/4 cups of water and a couple little spurts of soy sauce. Give it a light stir, and then cover with a lid. Cook for 3 minutes, stirring in between.

Cook uncovered on medium low heat until the sauce reaches the consistency shown above.

Use kitchen scissors to cut up the bacon and stir into the rice cakes. Add green onions and cilantro.

Grind sichuan peppercorns with a mortar and pestle and add to the rice cakes. (If you are sensitive to spice, I wouldn’t add this since it is very spicy.)

How to make Hobak Jeon (pan fried zucchini)!

Cut one zucchini into uniform 1/4 inch slices. Then, set aside.

Add one egg and a couple pinches of sea salt, white sugar, and black pepper to a bowl. Set this aside too.

Dip both sides of each zucchini slice into Korean pancake mix. Tap off any excess.

Dip your zucchini slices into the egg mixture before adding them to a skillet with vegetable oil. They should cook on each side for a couple minutes.

Let me tell you about Korean pears, sometimes called Asian or Japanese pears!

They are the only natively grown pear in Korea, and their taste profile is crisp and juicy.

They have a high water content, so they are not good in jams, jellies, or pies. They are perfect for Korean cooking, though, when they are used for sweetener.

They may look like apples, but they have the texture of pears. They can also be left out for hours and won’t brown immediately!

If you watch k-dramas, they may seem familiar, as they are used in ceremonial rituals!

They are used frequently in marinades, and in a famous dish called baesuk (a steeped pear filled with cinnamons and pine nuts).

These are ume or maesil, which are green plums! They are used as a sweetener in Korean cooking.

Thoroughly wash them, and then use a sharp tool to remove their stubs at the bottom.

When you’re done with that, let them dry on a paper towel for a few hours.

In a glass container, alternate with layers of white sugar and green plums.

This process takes 100 days to complete. For the first couple weeks, you’ll want to open up the container and stir every couple days!

You’re wanting to do Korean BBQ at home, let me show you the things you need and how easy it is to set up.

The first thing you need is a portable butane stove. These are only about $30 at HMart and come with cases that make them easy to transport.

You’ll also need to get some butane gas cartridges and you need them to turn your stove on. They only $7.99 at HMart where they are much cheaper than Amazon

The last thing you’ll need is a grill that’ll go on top of the stove. There’s a lot of options that will be $20-50. Just buy whichever is best for your budget.

That’s all you need to do Korean BBQ at home. Not very many things and very easy to set up!

You’ll need 3 basic condiments. The first being ssamjang. Get whatever brand works best for you.

The second condiment is the mild soy bean paste (doenjang)

Third and the one you’ve probably seen the most is gochujang. It is a must and you must have it.

The next thing you’ll need is obviously soy sauce. Get which ever one you’d like.

The next thing you’ll need is rice syrup. Some say white sugar can be a substitute, but I don’t think it is. Also get some plum syrup.

The next thing you’ll need is mirin which is not the same as rice vinegar. But you’ll also need to get rice vinegar. Mirin and rice vinegar are not the same.

I also always have brown rice vinegar and apple vinegar. But if you can only afford one, then make sure you get rice vinegar first

The next thing you need is gochugaru (roasted red pepper flakes). There’s both fine and coarse textures. For making kimchi, you’ll often need coarse.

Many of you have asked, let me show you some H Mart produce

Many of you know, I am OBSESSED with Korean pears. They are sold in large boxes, set of three, or single pears.

The next section is mushrooms. There’s a lot of different varieties. I always buy enoki, oyster, and trumpet mushrooms.

I always buy fresh ginger because it’s better here than anywhere else. This is more niche, but I always buy lotus root.

I usually buy spinach, peppers, carrots, and different leaves. Today, I bought sesame leaves and Thai basil leaves.

They also had dry persimmons (which they don’t always carry). On the leafy green aisle, it’s a bunch of bokchoy and some Chinese chives.

There’s also different types of eggplant. There is Thai, American, Chinese, and Italian. For Korean recipes, you’re going to want to use the Chinese eggplant.

I always buy a ton of cucumber, because… obviously.

And then you always have to buy scallions. Make sure to check the limit.
