Saengsun Gui (Korean Grilled Fish)

Ingredients

the fish

  • 1.5
    lbs Korean salted yellow croaker/corvina
    defrosted (or fresh red snapper or branzino)
  • 2
    tbsp all-purpose flour
  • 2
    tbsp neutral oil
  • 2
    tbsp potato starch
    or cornstarch

the sauce

  • 1/4
    cup soy sauce
  • 1
    tbsp rice wine vinegar
  • 1
    tbsp honey
  • 2
    tsp sesame oil
  • 1
    tbsp maesil
    Korean plum extract, optional
  • 2
    tbsp gochugaru
    Korean red pepper flakes
  • 1
    tbsp white sesame seeds
    toasted
  • 4
    scallions
    chopped
  • 2
    cloves garlic
    finely diced
  • 1
    jalapeño
    diced, or korean green chili
  • 1
    tsp ginger
    finely diced

Instructions

Add all sauce ingredients to a small mixing bowl or jar. Mix well to dissolve honey.

Add 2 tbsp potato starch (or cornstarch) and2 tbsp all-purpose flour to a large bowl. If fish is unsalted, add a pinch of salt to the bowl. Coat fish in bowl.

Heat 2 tbsp neutral oil (enough to coat pan) until glossy. Place fish in pan. Fry for 5 mins. Flip and fry the other side for 5 minutes. Fry for 2 minutes/side.

Mayak Gyeran (Soy Marinated Soft Boiled Eggs)

Ingredients

    eggs
  • 2
    tbsp honey
  • 1/4
    cup soy sauce
  • 1/2
    tbsp maesil//korean plum extract
    optional
  • 1
    tbsp rice wine vinegar
  • 1/4
    cup water
  • 1
    tsp ginger
    grated
  • 1/4
    cup leeks
    sliced
  • 1/4
    cup red onion
    sliced
  • 1
    tbsp white sesame seeds
  • 2
    scallions
    chopped
  • 2
    cloves garlic
    finely diced

Instructions

to make jammy eggs: prepare a large bowl with ice-cold water. set aside. in a medium-sized pot, boil water. once water is boiling, add 6 eggs. boil eggs for 7 minutes. (set a timer. you will forget.) after 7 minutes, immediately transfer eggs to ice-cold water bath.

once eggs are cool to touch, crack and peel eggs.

to make marinade: mix 1/4 cup soy sauce, 1/4 cup water, 1 tbsp rice wine vinegar,2 tbsp honey, and 1/1/2 tbsp maesil//korean plum extract (optional) make sure to stir to dissolve honey.

in a large jar, add jammy eggs, chopped alliums—2 cloves garlic (finely diced), 1/4 cup leeks (sliced), 2 scallions (chopped ), 1/4 cup red onion (sliced) —,and 1 tsp ginger (grated). add marinade. add 1 tbsp white sesame seeds. let eggs marinate for at least 4 hours or overnight.
