Saengsun Gui (Korean Grilled Fish)

Ingredients
the fish
- 1.5lbs Korean salted yellow croaker/corvinadefrosted (or fresh red snapper or branzino)
- 2tbsp all-purpose flour
- 2tbsp neutral oil
- 2tbsp potato starchor cornstarch
the sauce
- 1/4cup soy sauce
- 1tbsp rice wine vinegar
- 1tbsp honey
- 2tsp sesame oil
- 1tbsp maesilKorean plum extract, optional
- 2tbsp gochugaruKorean red pepper flakes
- 1tbsp white sesame seedstoasted
- 4scallionschopped
- 2cloves garlicfinely diced
- 1jalapeñodiced, or korean green chili
- 1tsp gingerfinely diced
Instructions

Add all sauce ingredients to a small mixing bowl or jar. Mix well to dissolve honey.

Add 2 tbsp potato starch (or cornstarch) and2 tbsp all-purpose flour to a large bowl. If fish is unsalted, add a pinch of salt to the bowl. Coat fish in bowl.

Heat 2 tbsp neutral oil (enough to coat pan) until glossy. Place fish in pan. Fry for 5 mins. Flip and fry the other side for 5 minutes. Fry for 2 minutes/side.

Pour sauce on top of fish. Serve with rice and lettuce or perilla leaf wraps.
