Creamy Cauliflower Casserole

Ingredients

  • 1
    head Cauliflower
  • 100
    g Vegan butter
  • 2
    tbsp Flour
  • 1.5
    cups Plant based milk
  • Pepper
  • Salt
  • 100
    g Vegan cheddar cheese
    grated
  • 3
    tbsp Nutritional yeast
  • 1
    handful Fresh parsley
  • 3-4
    cloves Garlic
  • 2
    tbsp Nutritional yeast

This dish is easy to make and can be served with other dishes, such as mashed potatoes or rice. It’s perfect for any occasion!

Start by cutting or separating the 1 head Cauliflower into small pieces. In a large pot, add water and the cauliflower and cook it for 5-7 min on medium heat.

While the cauliflower is cooking start preparing the sauce. In a large pan on medium heat add the 100 g Vegan butter and let it melt.

Add the 2 tbsp Flour and mix it together. Let it cook until it starts to become more yellow, ~3m. Then add the 1.5 cups Plant based milk and stir it together.

Next add Salt, Pepper, 3 tbsp Nutritional yeast, and 100 g Vegan cheddar cheese (grated). Stir until everything is same consistency. Cook until sauce thickens.

Remove the pan and pot from the stove. On the cutting board chop 3-4 cloves Garlic and 1 handful Fresh parsley. Add them to the sauce and stir.

In a baking dish place the cauliflower and cover it with the sauce. Sprinkle 2 tbsp Nutritional yeast on top and bake it for 40-50 min on 180C.

Once removed from the oven add more fresh parsley and enjoy the vegan cauliflower casserole as a main dish or side dish.
