Kimchi fried rice with bacon

Ingredients

  • 2
    handfuls Kimchi
    chopped
  • 3
    slices Bacon
    chopped
  • 3
    Spring onion
    chopped
  • 1
    tbsp Oil
  • 1
    pinch Sugar
  • 2
    tbsp Kimchi stock
  • 2
    bowls Rice
    cooked
  • 1
    tbsp Red chili pepper powder
  • Salt
  • Pepper
  • 2
    Eggs
  • Sesame seeds
  • Spring onion
    chopped

Instructions

Use your favorite kimchi. We like Jonga. You want about 2 handfuls Kimchi (chopped) to make 2 servings.

Prep 3 slices Bacon (chopped). The pieces should be about the same size as kimchi. Also prep 3 Spring onion (chopped).

Add 1 tbsp Oil to an unheated pan. Add 2.5 spring onions (leave the rest for garnishing) and apply medium heat to cook slowly. This makes more flavorful oil.

Add bacon and kimchi into the pan. Add 1 pinch Sugar (maybe 2 pinches). Sugar helps to balance out the acidity of kimchi. This is a must!

Add 2 bowls Rice (cooked). Add 2 tbsp Kimchi stock and 1 tbsp Red chili pepper powder. Mix it well.

Add Salt and Pepper to taste. Taste the rice before adding! Skip this step if it’s already seasoned well.

Cook 2 Eggs to go on top of the rice. You can cook it any way you want. We like it sunny side up!

Plate it and add sprinkles of Sesame seeds and Spring onion (chopped)!
