Chamchi Gyeran Jeon (Tuna Egg Pancake)

Ingredients

  • 1
    5oz Canned tuna in olive oil
  • 1/4
    Red onion
    Diced
  • 2
    Scallions
    Chopped
  • 200g Enoki mushrooms
    Chopped
  • 1
    Red bell pepper
    Diced
  • 2
    Eggs
  • 3
    Tbsp AP flour
  • Chile crisp
  • Mayonnaise
  • Furikake

Instructions

In a medium bowl, add 1 5oz Canned tuna in olive oil

Mix in 1 Red bell pepper (Diced), 1/4 Red onion (Diced),200g Enoki mushrooms (Chopped), and 2 Scallions (Chopped)

Add 2 Eggs and 3 Tbsp AP flour to the bowl

Mix to combine.

Season the mixture with a pinch of salt and pepper. Mix to combine.

In a medium-sized skillet over medium-high heat, add a splash of neutral oil to heat. Scoop 1/4 cup of the batter and lightly fry each side for 2 to 3 minutes, or until it's golden brown.

Repeat the same process with the remaining batter.

Transfer each jeon to the plate. Garnish with Mayonnaise, Furikake, and dollops of Chile crisp.
