Spring rolls with what you have on hand!

Ingredients
Main ingredients
- 6Rice paper
Dipping sauce
- 4tablespoons Almond butter (or pb)
- 8tablespoons Oyster sauce (or hoisin)
- 2tablespoons Mirin
- 2tablespoon Garlicminced
- 1cup Water
- 2tablespoon Oil
- 1teaspoon Sambal or chili w garlic (optional)
Filling - what I did
- 1bowl Chicken larbusing omsom sauce I made a bowl of chicken larb with green beans and scallions
- 1slice Avocadosliced
- 1Carrotsjulienned
- 4Persian Cucumberjulienned
- 10Perilla leaves
- 4cups Vermicelli noodles

Prepare all the ingredients you want inside as fillings. Traditionally it’s with boiled shrimp, some pork or NEM NƯỚNG, lettuce, vermicelli, but get creative!

Get one rice paper and put it in warm water and twist to get it all wet. Don’t leave it in too long or it will get way too soggy.

Start layering the filling with the sturdiest structure like cucumber and carrots and then layer the rest. You can also roll once, add shrimp, and roll again.
