Coconut Tres Leches Cake

Ingredients

  • 1 cup
    Flour
  • 1/2
    tsp Salt
  • 1 1/2
    tsp Baking powder
  • 1/3
    cup Dairy-alternative milk
  • 1/2
    cup Sugar
  • Egg yolks
  • 1
    tsp Vanilla extract
  • 12
    oz Sweetened condensed coconut milk
  • 12
    oz Evaporated coconut milk
  • 1/4
    cup Dairy-alternative milk
  • 1/4
    cup Powdered sugar
  • 1
    can Coconut milk fat

Instructions

Combine the 1 cup Flour, 1 1/2 tsp Baking powder, and 1/2 tsp Salt in one bowl

Mix the Egg yolks and 1/2 cup Sugar using a hand-held mixer. Once it's combined, stir in the 1/3 cup Dairy-alternative milk and 1 tsp Vanilla extract.

Stir in the yolk mixture with the dry ingredients. Be careful not to over-mix it.

In a separate clean bowl,use a mixer to whip up the egg whites. When the whites get foamy, slowly add the 1/4 cup sugar a bit at a time until stiff peaks.

Fold the whites with the yolk/dry ingredient batter.

Bake cake at 350F for 25 minutes. Then let cool thoroughly.

Mix the 12 oz Sweetened condensed coconut milk, 12 oz Evaporated coconut milk, and 1/4 cup Dairy-alternative milk.poke holes in cake and pour mix over the cake.

Refrigerate for 1-2 hours.Whip 1 can Coconut milk fat & 1/4 cup Powdered sugar using an electric hand mixer.Spread over chilled cake & add dusting of cinnamon
