Gilgeori Toast (Street Toast)

Ingredients

The Toast

  • 2
    Slices White Bread
  • 2
    Tablespoons Sugar
  • 2
    Tablespoons Butter
  • 1
    Slice Cheese
    (optional)
  • 1
    Slice Ham
    (optional)

The Egg Mixture

  • 1
    Cup Cabbage
    Julienned
  • 2
    Stalks Green Onions
    Thinly Sliced
  • 1/4
    Cup Onion
    Julienned
  • 1/4
    Cup Carrots
    Julienned
  • 2
    Eggs
  • 2
    Tablespoons Butter
  • 1
    Teaspoon Salt

Instructions

Chop up onion, green onions, carrot and cabbage.

Combine vegetables and add pinch of salt. Mix with your hands so that the vegetables will soften up. Add eggs and mix with fork.

Heat 1 tablespoon butter in a non stick pan over medium heat. Add egg mixture and shape. Heat on both sides for about 2-3 minutes. Best when it gets golden brown and a bit crispy on both sides. Set aside.

Heat 2 tablespoon butter in same pan over medium high heat. Add bread slices and flip each sides to be sure it is buttered. Grill the bread until each side is getting crispy and golden brown. About 1.5 minutes. Turn off heat. Sprinkle sugar on both piece

Oi Jangachi (Cucumber Pickles)

Ingredients

Ingredients

  • 2
    Pounds Cucumbers
    Chopped

Pickling Brine

  • 2
    Cups Water
  • 1
    Cup Soy Sauce
  • 1/2
    Cup Vinegar
    plus more to taste
  • 1/2
    Cup Sugar (white or brown)
    plus more to taste

Instructions

Chop up cucumbers. Add chopped cucumbers to glass jar. (I reused spaghetti jar or use airtight container)

Combine Water,Soy Sauce,Vinegar and Sugar in a pot to make the brine. Stir well and bring to a boil over medium heat. Let brine mixture boil for about 2 minutes.

Remove brine from heat and pour it into the jar over the cucumbers. Let the jars cool before putting in refridgerator.

Let it sit for a day or two. Enjoy with rice as a banchan. You can even pour brine over rice to enjoy!
