Sweet potato kimchi melt

Ingredients

  • 2
    Korean sweet potatoes
    cut half
  • 1/2
    cup Kimchi
  • 1/2
    Green pepper
  • 1/4
    Onion
  • 1/2
    Red pepper
  • Mozzarella cheese

Instructions

Wash 2 Korean sweet potatoes (cut half )and put them in the steamer for 20 minutes

Wash 1/2 cup Kimchi under water

Chop 1/2 Green pepper, 1/2 Red pepper, 1/4 Onion & washed kimchi

Sauté all the ingredients until tender

Once sweet potatoes are cooked, scoop the middle part and leave the sides about 1cm (make sure it’s cool down so it doesn’t break easily)

Mix scooped sweet potatoes and other veggies

Put the mixture back into sweet potato and sprinkle Mozzarella cheese on top. Bake at 350 degree for 5 minutes or until cheese melts
