Ingredients

  • Omni Pork Luncheon
  • 2
    tbsp cooking oil
  • 2
    large Yukon gold potatoes
    peeled
  • 1/4
    onion
  • 3-5
    dried chilis
  • 1
    tsp salt
  • 1/4
    tsp black pepper

Every family has their own version of Korean Stir Fry Potatoes, Gamjabokkeum. Some fry with green onions and some do nothing but potatoes. Let’s get started!

Protein is not necessary for Korean Stir Fry Potatoes, but I love the mixture of flavor and texture. Today I used Omni Pork Luncheon, it’s plant-based meat.

Heat a large nonstick skillet over medium-high heat. Add 2 tbsp cooking oil, swirl to coat, and place the luncheon meat. Cook 2-3min a side until golden brown.

Meanwhile, julienne 2 large Yukon gold potatoes (peeled) about 1/4-inch thin.

When luncheon meat is done cooking, remove from the heat and set aside.

Add the potatoes and cook in the same pan with grease until it’s 1/2 way cooked, about 3 minutes. Add 1 tbsp oil if potatoes stick too much.

Meanwhile, slice 1/4 onion nice and thin. Add the onion, season with 1 tsp salt and 1/4 tsp black pepper. Add 3-5 dried chilis, and stir fry for 3-4 minutes.

Now, cut the luncheon meat into long match sticks and toss in with the potatoes. Transfer to a serving plate, serve with a warm bowl of rice or ice-cold beer!
