- 533ml Cold water
- 850grams Tippo OO Flourleave 150 g for flouring the dough
- 25grams Salt
- 1tsp Dry yeast

850 grams Tippo OO Flour (leave 150 g for flouring the dough)533 ml Cold water25 grams Salt 1 tsp Dry yeast

Cold water in bowl, Mix salt & 1/10th of flour. Dissolve yeast. Slowly add rest of flour. Rest dough 2 hrs covered wet towel. Rise in sealed container 6-24 hrs
