Sesame Lime Noodles

Ingredients

The Sesame Lime Sauce

  • 1
    Tbsp Lime juice
  • 2
    Tbsp Rice Vinegar
  • 3
    Cloves Garlic
  • 1.5
    Tbsp Maple Syrup
  • 1
    Tbsp Ginger
  • 1/4
    Cup Soy Sauce
  • 1
    Tbsp Sesame Oil
  • 3
    Tbsp Tahini
  • 8
    oz Brown Rice Noodles
  • 1
    Cucumber
  • 1/2
    Cup Green Onions
  • 1/3
    Cup Roasted Peanuts

Instructions

Cook your rice noodles of choice.

Slice cucumbers in half. Use spoon to scoop out seeds in middle. Slice into thin matchsticks, 3-4 inches long.

Slice up some green onions, 1-2 inches wide.

Wash and cut up your cilantro.

Chop up roasted peanuts.

Mix together all ingredients for your sesame lime sauce in one bowl.

Add drained noodles, cucumber, green onions, cilantro, peanuts, and sauce in a large bowl. Mix together to evenly coat.

Add chopped tofu cubes to noodle salad and gentle mix (be careful to not break up tofu).

Plate and garnish! Eek Smakelijk!
