Vegan GF Oatmeal Raisin Cookies

Ingredients

Raisins

  • 1
    Cup Boiling Water
  • 2/3
    Cup Raisins

Flax Egg

  • 1
    Tablespoon Flax Meal
  • 3
    Tablespoons Water

Wet Ingredients

  • 1/4
    Cup Vegan Butter
  • 1/4
    Cup Coconut Oil
  • 1/2
    Cup Coconut Palm Sugar
  • 6
    Tablespoons Organic Cane Sugar
  • 1
    Teaspoon Vanilla Extract

Dry Ingredients

  • 1
    Cup GF Flour (I use Arthur’s)
  • 1
    Teaspoon Ground Cinnamon
  • 1/4
    Teaspoon Ground Nutmeg
  • 1/2
    Teaspoon Baking Soda
  • 1/4
    Teaspoon Salt

Add-Ins

  • 1 1/2
    Cups Rolled Oats

Instructions

Preheat oven to 350 degrees F. In a medium sized bowl, soak raisins in hot water to soften. Prepare flax egg by mixing flax and water in small bowl for 15 min.

In a standing mixer, fluff butter for 30 seconds. Then add in sugars for 1-2 minutes, until fluffy. Add in flax egg and vanilla extract until combined.

Mix dry ingredients into a medium bowl: flour, salt, baking soda, and cinnamon. Mix with wet ingredients in standing bowl until a smooth dough forms.

Drain raisins and gently squeeze them to dry in a kitchen towel (don’t squeeze too hard). Add raisins and oats to dough and work them in by hand using a spatula

Make tablespoon sized balls of dough and place on parchment lined baking sheets. I was able to make 18 balls. Bake for 13-15 minutes, until golden brown.

Take cookies out. Let them cool for 10-15 minutes. They will be too soft at first but will harden as they cool. After they are cool, enjoy!
